In Japan

  • A preservative that suppresses the growth of microorganisms. Under the standards for use, it can be used in cheese, bread and Western-style confectionery.
  • Preservatives are one of the 8 purposes for which the purpose name must be written alongside, as in “保存料(プロピオン酸Ca)” (preservative (calcium propionate)).

Japan's standards for use

  • Cheese: up to 3.0 g/kg as propionic acid
  • Bread and Western-style confectionery: up to 2.5 g/kg as propionic acid
  • When used in cheese together with sorbic acid, potassium sorbate or calcium sorbate, the total amount must be up to 3.0 g/kg
