Source and production
Obtained from the trunk, branches, or bark of Jamaica quassia (Picrasma excelsa), with quassin and neoquassin as the main components. It may contain sugars.

In Japan

  • Obtained from the trunk and bark of Jamaica quassia, with quassin and neoquassin as the main components. The component specification requires a combined total of 50% or more of the two (Japan's Specifications and Standards for Food Additives). In the List of Existing Food Additives, its purpose is listed as “苦味料等” (bittering agent, etc.). There are no standards for use.
  • When used to add bitterness, it can be labeled with the group name “苦味料” (bittering agent). Another name is “カッシアエキス” (quassia extract), and the abbreviated name is “カッシア” (quassia).
