Source and production
A protein-digesting enzyme obtained from the fruit or rhizome of pineapple (Ananas comosus) (definition in the specifications and standards). It may contain lactose or dextrin.

In Japan

  • A protein-digesting enzyme obtained from the fruit or rhizome of pineapple (Japanese Standards of Food Additives, 10th edition). The simplified name when written by substance name is “ブロメリン” (bromelin).
  • There are no standards for use. If it stays active and has an effect in the final food, it can be labeled with the group name “酵素” (enzyme), but when it counts as a processing aid, labeling is exempt (Food Labeling Standards).
