Source and production
An oxidoreductase that adds oxygen to unsaturated fatty acids to introduce a hydroperoxide group, obtained from plant oil meal or cultures of a filamentous fungus (genus Rhizopus) (definition in the Japanese Specifications and Standards for Food Additives).

In Japan

  • An oxidoreductase that binds oxygen to unsaturated fatty acids, obtained from plant oil meal or cultures of a mold (genus Rhizopus). There are no standards for use.
  • An enzyme can be written with the group name “酵素” (enzyme) when it remains active and has an effect in the final food. Labeling is omitted when it counts as a processing aid, for example when it is inactivated during manufacturing. Its alternative name is “リポキシダーゼ” (lipoxidase).
