- Source and production
- An enzyme that reduces and breaks down hydrogen peroxide, obtained from cucumber, horseradish, daikon radish, or soybean, or from cultures of basidiomycetes, filamentous fungi, actinomycetes, or bacteria.
In Japan
- An enzyme that breaks down hydrogen peroxide, obtained from plants (cucumber, horseradish, daikon radish, soybean) or from microbial cultures (as defined in the Japanese Standards of Food Additives). Another name is “ペルオキシダーゼ” (peroxidase, alternate spelling). There are no standards for use.
- It falls within the group name “酵素” (enzyme); if it is not inactivated and its effect remains in the final food, it can be written together as “酵素”. If it counts as a processing aid, such as when it is inactivated or removed during production, labeling is exempt (Food Labeling Standards).
