Source and production
An enzyme that dissolves bacterial cell walls, obtained from egg white by treating it with an alkaline aqueous solution and a salt solution and purifying with a resin, or by treating it with a resin or by adding salt and then purifying by column or recrystallizing (definition in the specifications).

In Japan

  • An enzyme obtained from egg white that dissolves bacterial cell walls. Its purpose in the List of Existing Food Additives is “酵素” (enzyme), and the alternative name is “卵白リゾチーム” (egg white lysozyme).
  • No standards for use (the foods it can be used in or the maximum amounts) have been set.
  • Because it is made from egg, the egg allergen is shown on the label as “リゾチーム(卵由来)” (lysozyme (derived from egg)) or “酵素(卵由来)” (enzyme (derived from egg)) (examples in the Consumer Affairs Agency's allergen labeling guidance). It falls within the group name for enzymes.
