Labeling rules
- Shrimp is an allergen that must be labeled (Food Labeling Standards, Appended Table 14).
- If the ingredient name contains the character string “えび” (shrimp), so that it is clear shrimp is used (a substitute or expanded notation), the allergen statement “(一部にえびを含む)” (contains shrimp as part of the product) can be omitted (the Consumer Affairs Agency's Q&A on the Food Labeling Standards, item F-1).
- When dried shrimp is sold as is, it falls under “素干魚介類・煮干魚介類” (plain-dried and boiled-dried seafood), a group of processed foods that require country-of-origin labeling of raw materials (Appended Table 15).
Good to know
- The dashi pack on this site (“十二単衣” (Juni Hitoe)) lists “干しえび” (dried shrimp) in its ingredients and has no “(一部に〜を含む)” (contains … as part of the product) statement.
- In the Standard Tables of Food Composition in Japan (8th revised edition, 2023 supplement), dried shrimp has 7,100 mg of calcium and 3.8 g of salt equivalent per 100 g.
