Shiitake mushrooms that have been dried. They are used as a source of umami in dashi packs and flavor seasonings (dashi stock granules).

Labeling rules
- The Food Labeling Standards (Appended Table 3) define dried shiitake as “the fruiting bodies of shiitake fungus, dried” (whole, with the stems removed, or with the caps thinly sliced). Those picked before the caps are seven-tenths open (“七分開き”) are called “どんこ” (donko), and those picked after they are seven-tenths open are called “こうしん” (koshin).
- When dried shiitake itself is sold, the ingredient name is written “しいたけ” (shiitake). Those grown by inoculating logs of konara oak, sawtooth oak, and the like are labeled “原木” (log-grown), and those grown on a medium of compacted sawdust and the like are labeled “菌床” (sawdust-block-grown) (Appended Tables 3 and 4).
- In flavor seasonings (dashi stock granules), powder or extract of dried shiitake is one of the “風味原料” (flavoring ingredients), and its type name under the naming rule is “しいたけ” (shiitake) (Appended Tables 3 and 4).
Good to know
- When it is used as one of several ingredients, as in a dashi pack, the label often does not give the origin or how it was grown. This is because country-of-origin labeling of ingredients is mandatory only for the ingredient that is first by weight.
- In the Standard Tables, dried shiitake has 46.7 g of dietary fiber and 17.0 µg of vitamin D per 100 g.
