What the maker says it does not use
From the new-release notice on the official site of 風と光 (August 2024), which says of its 4 organic Taiwanese Chinese seasonings “気になる防腐剤、着色料、酵母エキス、アルコールを一切使用していません” (no preservatives, coloring, yeast extract or alcohol, which people may worry about, are used at all).

This one is mainly chili peppers and fava beans, with no sugar. The organic doubanjiang from 風と光 uses soybeans and wheat rather than fava beans, and sugar is the largest ingredient.
