A dashi pack that you simmer to extract the stock, filled with five items: dried bonito flakes (katsuobushi), dried sardines (niboshi), kombu (kelp), shiitake mushrooms and dried horse mackerel (niboshi). All the ingredients are foods, and no salt is added.

The package says “当工場では、小麦・えび・大豆・さけ・さばを使用した製品を製造しています” (this factory also makes products using wheat, shrimp, soybean, salmon and mackerel). It also has a note to keep it in the refrigerator after opening. Guide per bag (8 g): 600–700 ml for miso soup or clear soup (osuimono), and 400–500 ml for udon or soba broth.

What the maker says it does not use
From the manufacturer’s product list and the official online shop (“うま味調味料・食塩・保存料無添加”: no umami seasoning, salt or preservatives). The official site’s Q&A explains that seasonings such as powdered soy sauce are not used either.
