Selected ingredient小麦粉(国内製造) wheat flour IngredientRole: Main ingredientIngredients are listed in order of weight, so wheat flour is the largest one. “国内製造” (made in Japan) means the wheat was milled into flour in Japan; it is not where the wheat was grown. According to Shimadaya's official origin information, the main countries of origin of the wheat are Australia, the United States, Canada and Japan (in no particular order, and they change by season).

Copied from the package as of the date checked. The label is shown in Japanese as printed; tap an ingredient to see its English name and role. The links in the table below lead to our Ingredients A–Z and food additive database. The product name on the front is “太鼓判 中華そば 3食” (Taikoban Chukasoba, 3 servings), and “ゆで中華めん” (boiled Chinese-style noodles) is the name. The official site says it is sold only in western Japan (Hokuriku, Chukyo, Kinki, Chugoku and Shikoku), with a shelf life of 21 days. The package says that the factories (+KMT and +NH) also make products containing buckwheat (soba), that freezing may change the quality, that the noodles should be eaten soon after opening the inner bag, and that they must be eaten cooked.

小麦粉(国内製造)wheat flourIngredientMain ingredientIngredients are listed in order of weight, so wheat flour is the largest one. “国内製造” (made in Japan) means the wheat was milled into flour in Japan; it is not where the wheat was grown. According to Shimadaya's official origin information, the main countries of origin of the wheat are Australia, the United States, Canada and Japan (in no particular order, and they change by season).
食塩saltIngredientSaltiness—
卵白粉(卵を含む)egg white powder (contains egg)IngredientTexture of the noodlesEgg white dried and made into a powder. The “卵を含む” (contains egg) in the parentheses is the allergen labeling.
グリシンglycineFood additiveAmino acid (the purpose of use in this product is not disclosed)One of the amino acids. It is permitted as a food additive with no usage standard (Food Safety Commission evaluation). When used for seasoning it may be written as “調味料(アミノ酸)” (seasoning (amino acids)), but this product uses the substance name “グリシン” (glycine). The official site does not say what it is used for in this product.
かんすいkansui (alkaline noodle agent)Food additiveChewiness and flavor typical of Chinese-style noodlesAn alkaline agent used to make Chinese-style noodles. It contains one or more of potassium carbonate, sodium carbonate, sodium hydrogen carbonate, and potassium or sodium salts of phosphoric acids. The rules allow all of these to be written under the group name “かんすい”, so the substance names do not appear on the label (Consumer Affairs Agency notice).
クチナシ色素gardenia pigmentFood additiveColoringA pigment taken from gardenia fruit. Colorants are normally written as “着色料(○○)” with the function name, but when the name includes the character “色” (color) the function name may be left out, so “着色料” is not written (Consumer Affairs Agency notice).
保存料(しらこたん白:さけ由来)preservative (milt protein: derived from salmon)Food additiveExtends shelf lifeProtein taken from the milt (testes) of salmon and similar fish, then broken down and purified (Hiroshima Prefecture food hygiene Q&A). Its name in the List of Existing Food Additives is “しらこたん白抽出物” (milt protein extract), and the label uses the other name “しらこたん白” (milt protein). Preservatives must be written with the function name “保存料” (preservative). “さけ由来” (derived from salmon) is written because salmon is an item for which allergen labeling is recommended (an item equivalent to the specified ingredients).

Not found in the ingredient list

酒精 · distilled alcohol加工でん粉 · modified starch乳酸ナトリウム · sodium lactate

This is not the maker's “not used” claim. These are things often seen in similar products that we checked are not written in this product's ingredient list. Additives carried over from ingredients may not be declared, so this does not mean they are absent (about additives not written on labels).
