Source and production
Obtained from the skins of American grape or grape, with anthocyanins as the main component. It may contain dextrin or lactose (specifications).

In Japan

  • Its purpose in the List of Existing Food Additives is colorant. The alternative name is “エノシアニン” (enocyanin), and the short names are “アントシアニン” (anthocyanin), “アントシアニン色素” (anthocyanin color), and “ブドウ色素” (grape color).
  • When written with the character “色” (color), as in “ブドウ果皮色素” or “ブドウ色素”, the purpose name “着色料” (colorant) can be omitted. When written as “アントシアニン” or “エノシアニン”, the purpose name is placed alongside, as in “着色料(アントシアニン)” (colorant (anthocyanin)).
  • A standard for use common to natural colorants applies: it cannot be used in kelp (konbu), meat, fresh fish and shellfish, tea, nori seaweed, beans, vegetables, or wakame seaweed.
