The only ingredient is seawater from Miyakojima. Seawater concentrated through a reverse osmosis membrane is sprayed onto a heated metal plate and crystallized all at once, giving a salt as fine as powder.

The package says “お塩は長期保存が可能なため、賞味期限の表記は省略しています” (because salt can be stored for a long time, the best-before date is omitted). Under the Food Labeling Standards, salt is a food for which the best-before date may be omitted. Because it is as fine as powder, it clumps easily in humidity, and the package recommends storing it in the refrigerator after opening. According to the package, a level tablespoon holds about 5 g of Yukishio against about 17 g of ordinary salt, so by eye you use about 3 times the volume to get the right amount.

The process is “溶解、立釜、乾燥、混合” (dissolving, vacuum pan, drying, mixing). Imported solar salt is dissolved in water, boiled down again in a closed pan (tatekama), dried, and mixed with magnesium carbonate to make it harder to cake. It is at least 99.5% sodium chloride. Note that under the fair competition code for salt, labeling salt simply as “無添加” (additive-free) or as “ミネラル豊富” (rich in minerals) is not permitted.
