Copied from the package as of the date checked. The label is shown in Japanese as printed; tap an ingredient to see its English name and role. The links in the table below lead to our Ingredients A–Z and food additive database. The name on the label is “有機米酢” (organic rice vinegar), and the product name on the official site is “老梅 有機純米酢”. “老梅” (Roubai) is a registered trademark of the company, and the label says “老” means long aging and “梅” means a traditional acidulant (ume is not one of the ingredients). The label says “開封後は冷蔵をおすすめします” (refrigeration is recommended after opening), and the official site’s FAQ says the best-before date is 2 years from bottling and recommends refrigeration in summer. On the official site, you can enter the best-before date to look up the “製造履歴” (production history), which shows the rice grower, the brewing date and the bottling date.
Ingredients, one by one
| On the label | Type | Role | Notes |
|---|---|---|---|
| 有機栽培米(国産)organically grown rice | Ingredient | Main ingredient (the only ingredient) | Rice grown to the Organic JAS standard. Only products certified under Organic JAS may be labeled “有機” (organic), and the official site explains that 河原酢造 is certified by JONA (Japan Organic & Natural Foods Association). The rice is grown by the company itself in Ono, Fukui, and is also bought from growers in Ishikawa and Akita, it says. The official site explains that the vinegar is made by turning rice into sake with koji, then into vinegar with acetic acid bacteria, and leaving it still while a film of the bacteria forms on the surface (“静置醗酵”, static fermentation). Because “アルコール” (alcohol) is not in the ingredient list, the sake that is the base of the vinegar is also made only from rice. |
Not found in the ingredient list
This is not the maker's “not used” claim. These are things often seen in similar products that we checked are not written in this product's ingredient list. Additives carried over from ingredients may not be declared, so this does not mean they are absent (about additives not written on labels).

米(国産)、アルコール
Ingredient list from Mizkan’s official page (checked 2026-09-30). Neither lists additives. The differences are that Mizkan’s rice vinegar has “アルコール” (alcohol) in its ingredient list, so alcohol is also used as a raw material for the vinegar besides rice, and that the rice in Roubai is organically grown.
