Enoki mushroom えのきたけ

A kind of mushroom. It is the main ingredient of enoki simmered with soy sauce, sugar, and the like and packed in jars (such as the “なめ茸” (namekotake, simmered enoki) on this site).

Labeling rules

  • Raw enoki mushrooms fall under the fresh food category “agricultural products (including mushrooms, wild vegetables, and bamboo shoots)” (Food Labeling Standards, Appended Table 2).
  • The Food Labeling Standards (Appended Table 3) define “えのきたけ缶詰又はえのきたけ瓶詰” (canned or bottled enoki mushrooms) as a canned or bottled agricultural product packed with enoki mushrooms from which the base of the stems (石突き, ishizuki) has been removed.
  • For canned or bottled enoki that are packed after simmering with soy sauce, sugars, and the like, the “固形分” (solids content) is labeled. It is written as a percentage in multiples of 10 that does not exceed the actual solids content (Appended Table 19).

Good to know

  • Among the products on this site, the namekotake (なめ茸, Kobayashi Farm) starts its ingredient list with “榎茸” (enoki) and gives the place of origin (Nagano Prefecture). Since it is the first ingredient by weight, it carries country-of-origin labeling of the ingredient. The official shop explains that the product is finished at 80% solids content.
  • In the Standard Tables of Food Composition in Japan (8th revised edition, 2023 supplement), raw enoki has 34 kcal and 3.9 g of dietary fiber per 100 g. Seasoned bottled enoki has 76 kcal and 4.3 g of salt equivalent.
