Tomatoes are pressed, the skins and seeds are removed, and the juice is boiled down to a concentrate. The name depends on how concentrated it is.

Labeling rules
- The Food Labeling Standards (Appended Table 3) define concentrated tomato with a salt-free soluble solids content of less than 24% as “トマトピューレー” (tomato puree), and 24% or more as “トマトペースト” (tomato paste). Paste is the more concentrated of the two.
- Tomato ketchup is concentrated tomato seasoned with salt, spices, vinegar, sugars, and onion or garlic, with soluble solids of 25% or more, among other conditions (Appended Table 3).
- Fresh or frozen vegetables can be grouped together as “野菜” (vegetables) in the ingredient list, but tomato paste cannot be included in “野菜” (the Consumer Affairs Agency's Q&A on the Food Labeling Standards, 加工-58).
Good to know
- In the Standard Tables of Food Composition in Japan (8th revised edition, 2023 supplement), tomato paste has 94 kcal and 1,100 mg of potassium per 100 g, and tomato puree has 44 kcal and 490 mg. Every value is about twice as high in the paste.
- Among the products on this site, these are used in curry roux (listed as “トマトペースト” and “トマトパウダー”) and tomato ketchup (listed as “トマト”).
