Allyl Isothiocyanate (Volatile Oil of Mustard) イソチオシアン酸アリル(別名揮発ガイシ油)
Designated additiveEU: flavoring substance (FL 12.025)EFSA ADI 約0.02mg per kg body weight per day
- Purpose
- flavoring
- On the label
- “香料” (flavoring)
- Name in the List of Designated Additives
- イソチオシアン酸アリル(別名揮発ガイシ油) (No. 55)
In Japan
- Its other name is “揮発ガイシ油” (volatile oil of mustard). In Japan it is designated as a flavoring, and under the standards for use it may not be used for any purpose other than flavoring.
- When used as a flavoring, it can be written with the group name “香料” (flavoring) alone.
Japan's standards for use
- Only for flavoring purposes
This is a summary of the standards for use. See the source list for the exact conditions.
In the EU
- In the EU, flavoring substances are covered by the flavorings regulation (Regulation (EC) No 1334/2008), not by the list of food additives. It is on the Union list of flavoring substances (Annex I) as FL 12.025.
- In 2010, EFSA evaluated a proposal to use it as a food additive for preventing spoilage and set an ADI of about 0.02 mg per kg of body weight per day. It pointed out that average intake from naturally occurring amounts in food, flavoring use, and the spoilage-prevention use combined would be 2 to 4 times the ADI in children.
- In its 2010 evaluation, EFSA (the European Food Safety Authority) set an ADI (acceptable daily intake) of 約0.02mg per kg of body weight per day (EFSA ANS).
When it is labeled under a shared name
Allyl Isothiocyanate (Volatile Oil of Mustard) may be declared on the label in the same way as “香料”. See Flavoring for details.

This page lists facts stated in laws and in evaluations by public bodies; it is not a safety verdict. Additives used in Japan are approved by the government, which sets the foods and amounts they can be used in. The ADI is a guide to the amount that is considered safe to take every day over a lifetime.
