  • A mixture of two pyrazine compounds, designated as a flavoring substance. Under the standards for use, it cannot be used for any purpose other than adding aroma.
  • When used as a flavoring, it can be written under the group name “香料” (flavoring) on food labels, so the substance name does not normally appear in the ingredient list.

In the EU

  • In the EU, flavoring substances are covered by the flavorings regulation (Regulation (EC) No 1334/2008), not by the list of food additives.
  • Of the components of the mixture, 2-ethyl-3,5-dimethylpyrazine is listed as FL 14.024 and 2-ethyl-3,6-dimethylpyrazine (3-ethyl-2,5-dimethylpyrazine) as FL 14.111 in the Union List of flavoring substances.

When it is labeled under a shared name

Mixture of 2-Ethyl-3,5-dimethylpyrazine and 2-Ethyl-3,6-dimethylpyrazine may be declared on the label in the same way as “香料”. See Flavoring for details.
