In Japan

  • Used to add sourness, adjust pH, make dough rise (as a leavening agent), and so on. There are no standards for use.
  • It falls within the group names acidulant, pH adjuster, and leavening agent, so when used for those purposes it can be written with the group name. When used together with sodium citrate, it can be written together as “クエン酸(Na)” (citric acid (Na)) (Annex to the CAA’s “Guidelines on the Food Labeling Standards”).
