- Used to adjust the pH of food and to adjust flavor.
- It falls within the group names for pH adjusters and for seasonings (organic acids), and when used for those purposes it can be written as “pH調整剤” (pH adjuster) or “調味料(有機酸)” (seasoning (organic acid)). It is not within the group name for acidulants.
- The short name when written by substance name is “乳酸K” (potassium lactate). No standards for use have been set.
