In Japan

  • One of the potassium salts of phosphoric acid. There are no standards for use (rules on permitted foods and amounts).
  • When used as kansui, a pH adjuster, a leavening agent, or a seasoning (inorganic salts), or as an emulsifier in processed cheese products, it can be labeled with the group name. The simplified names when written by substance name are “リン酸K” and “リン酸カリウム”. When used together with other phosphates, they can be grouped together, for example as “リン酸塩(Na、K)” (phosphates (Na, K)) (the CAA's “食品表示基準について” (Notes on the Food Labeling Standards), Attachment).

In the EU

  • It is on the EU list of food additives (Regulation (EC) No 1333/2008, Annex II) as E340.
  • In its 2019 evaluation, EFSA (the European Food Safety Authority) set an ADI (acceptable daily intake) of 40mg per kg of body weight per day (a group ADI, for the total of related substances) (EFSA FAF).

When it is labeled under a shared name

Potassium Dihydrogen Phosphate (Potassium Phosphate, Monobasic) may be declared on the label in the same way as “リン酸塩”. See Phosphates for details.
