  • Used in ham, sausage, fish paste products, Chinese noodles, and so on.
  • They may also be included within group names such as “かんすい” (kansui), “膨張剤” (leavening agent), and “pH調整剤” (pH adjuster).

  • In its 2019 re-evaluation, EFSA set a group ADI for phosphates of 40 mg per kg of body weight per day, as phosphorus, and recommended reviewing the maximum use levels.
