In Japan
- The sodium salt of gluconic acid. It falls within the range of the group names acidulant, pH adjuster, seasoning (organic acid), and yeast food, and when used for each of those purposes it can be written with the group name. In processed cheese it can also be written with the group name “乳化剤” (emulsifier).
- When written by substance name, the short name “グルコン酸Na” (sodium gluconate) can also be used. There are no standards for use.
