- Used to adjust the pH of food and to adjust sourness and taste.
- It falls within the range of the group names pH adjuster, acidulant, and seasoning (organic acid), and when used for those purposes it can be written with the group name alone.
- When written by substance name, the short name is “酢酸Na” (sodium acetate). No standards for use have been set.
