- The sodium salt of L-tartaric acid. It falls within the group names for acidulant, pH adjuster, and seasoning (organic acids), and when used for those purposes it can be written under a group name.
- When written by substance name, the simplified names are “酒石酸ナトリウム” (sodium tartrate) and “酒石酸Na” (sodium tartrate). No standards for use have been set.

- It is on the EU list of food additives (Regulation (EC) No 1333/2008, Annex II) as E335(ii).
- In its 2020 evaluation, EFSA (the European Food Safety Authority) set an ADI (acceptable daily intake) of 240mg per kg of body weight per day (a group ADI, for the total of related substances) (EFSA FAF).
When it is labeled under a shared name
