In Japan
- The sodium salt of lactic acid. It has no standards for use (rules on which foods it can be used in and how much).
- When used as a pH adjuster, acidulant or seasoning, it can be written under the group names “pH調整剤” (pH adjuster), “酸味料” (acidulant) or “調味料(有機酸)” (seasoning (organic acid)), so the substance name may not appear. The short name when written by substance name is “乳酸Na” (sodium lactate) (CAA, Attachment to the Food Labeling Standards guidance).
