Obtained by heating a mixture of amino acids and monosaccharides.

In Japan

  • Obtained by mixing amino acids and monosaccharides and heating them. Its purpose in the List of Existing Food Additives is antioxidant, and the simplified name is “糖・アミノ酸複合物” (sugar-amino acid complex).
  • Because it is used for antioxidant purposes, it is written together with its purpose name, as in “酸化防止剤(糖・アミノ酸複合物)” (antioxidant (sugar-amino acid complex)). There are no standards for use.
