Source and production
Obtained by extracting hot with water the residue left after steam distillation of fennel fruit. It may contain dextrin. In the definition in the List of Existing Food Additives, the main component is glucosyl sinapyl alcohol.

In Japan

  • An antioxidant made by extracting with hot water the residue left after essential oil is removed from fennel fruit by steam distillation (Japanese Standards of Food Additives). There are no standards for use.
  • Antioxidant is a use for which the purpose name must be written alongside, as in “酸化防止剤(精油除去ウイキョウ抽出物)” (antioxidant (essential-oil-removed fennel extract)). The alternative name is “精油除去フェンネル抽出物” (essential-oil-removed fennel extract). In the List of Existing Food Additives, it is excluded from the definition of spice extracts.
