- Source and production
- Obtained from the roots of horseradish, with isothiocyanates as the main component. The component specification requires 65.0% or more as allyl isothiocyanate.
In Japan
- Obtained from horseradish roots, with isothiocyanates (the pungent components) as the main component. In the List of Existing Food Additives, its purposes are listed as antioxidant and processing agent (“製造用剤”); another name is “ホースラディッシュ抽出物” (horseradish extract).
- When used for its antioxidant effect, it is written together with the purpose name, as in “酸化防止剤(セイヨウワサビ抽出物)” (antioxidant (horseradish extract)). There are no standards for use.
- It is excluded from the scope of the existing food additive “香辛料抽出物” (spice extract) and is treated as a separate item.
