- Source and production
- Obtained by treating with enzymes the supernatant, with the pulp removed, of juice pressed from apple fruit, then purifying it. The active components are chlorogenic acid and catechins.
In Japan
- An antioxidant obtained by treating apple juice with enzymes and purifying it, with chlorogenic acid and catechins as the active components (product list of the List of Existing Food Additives). There are no standards for use.
- Antioxidant is a use for which the purpose name must be written alongside, as in “酸化防止剤(リンゴ抽出物)” (antioxidant (apple extract)). The simplified names are “リンゴ抽出物” (apple extract) and “リンゴエキス” (apple extract).
