- Source and production
- Obtained from coffee (Coffea arabica) seeds by extraction with a warm acidic aqueous solution of ascorbic acid or citric acid. The active components are chlorogenic acid and polyphenols.
In Japan
- An antioxidant obtained by extracting raw coffee beans (seeds) with an acidic aqueous solution, with chlorogenic acid and polyphenols as the active components (List of Existing Food Additives).
- Because it is an antioxidant, it is written together with the purpose name, as in “酸化防止剤(生コーヒー豆抽出物)” (antioxidant (green coffee bean extract)). The list gives no short name or category name.
