Source and production
Obtained by treating starch with enzymes, as non-reducing cyclic dextrins. There are α, β, and γ types (rings of 6, 7, and 8 D-glucose units) and branched cyclodextrins.

In Japan

  • A cyclic oligosaccharide, in which glucose units are linked in a ring, obtained by treating starch with enzymes. There are α (6 units), β (7 units), and γ (8 units) types, and branched cyclodextrins (Japanese Standards of Food Additives). Its purpose in the List of Existing Food Additives is manufacturing agent. There are no standards for use.
  • It can be labeled as “シクロデキストリン” (cyclodextrin), its other name “サイクロデキストリン” (cyclodextrin), or its short name “環状オリゴ糖” (cyclic oligosaccharide).
