- Obtained from the cell walls of yeast of the genus Saccharomyces (limited to S. cerevisiae, S. bayanus, and S. pastorianus); the main component is polysaccharides.
In Japan
- An additive whose main component is polysaccharides obtained from the cell walls of yeast of the genus Saccharomyces (Japan's Specifications and Standards for Food Additives). Its purposes in the list of items in the List of Existing Food Additives are thickening stabilizer and processing agent. There are no standards for use.
- When used for thickening or stabilizing, it is written together with its purpose name, such as “増粘剤(酵母細胞壁)” (thickener (yeast cell wall)). The alternate name is “酵母細胞膜” (yeast cell membrane).
