In Japan
- The calcium salt of citric acid, used as a fortifier to add calcium and as a processing agent.
- It falls within the range of the group names “膨脹剤” (leavening agent) and “調味料(有機酸)” (seasoning (organic acid)), and in processed cheese it is also treated as an emulsifier.
- It is also within the range of additives that may be used for nutritional fortification, and when used for that purpose it is exempt from labeling. Its short name is “クエン酸Ca” (calcium citrate).
