Source and production
Obtained by hydrolyzing with enzymes the nucleic acids extracted with water from the cells of yeast (Candida utilis), then separating the product. The component is 5'-adenylic acid (as defined in the specifications).

In Japan

  • 5'-Adenylic acid (adenosine monophosphate), obtained by breaking down nucleic acids extracted from yeast cells with enzymes. Its purpose in the List of Existing Food Additives is “強化剤” (nutrient fortifier). There are no standards for use.
  • Another name is “アデノシン5'-一リン酸” (adenosine 5'-monophosphate), and the short name is “5'-AMP”. When used for nutritional fortification, labeling is exempt (excluding foods for special dietary uses and foods with function claims).
