In Japan

  • Its category in the standards for use is fortifier and tofu coagulant. It is limited to 1.0% of the food as calcium, and cannot be used except where essential to manufacturing or processing and for nutritional purposes.
  • When used to set soy milk, it can be written together as “豆腐用凝固剤” (tofu coagulant) or “凝固剤” (coagulant). The simplified name when written by substance name is “塩化Ca” (Ca chloride), and when used together with magnesium chloride it can be written as “塩化物(Ca,Mg)” (chlorides (Ca, Mg)).
  • It is among the additives that may be used for nutrient fortification (minerals), and labeling is exempt when it is used for that purpose.

  • Up to 1.0% of the food as calcium (excluding foods bearing special dietary use labeling).
  • Must not be used except where essential to food manufacturing or processing and for nutritional purposes.
