In Japan

  • A nutrient fortifier used to supply copper; two are designated, copper gluconate and copper sulfate. The standards for use limit the foods they can be used in, and copper sulfate can also be used as a manufacturing agent for wine.
  • It is among the “additives thought to be used for nutrient fortification” (minerals), and labeling can be omitted when it is used for nutrient fortification (except for foods for special dietary uses and foods with functional claims).

Japan's standards for use

  • Copper gluconate: only for infant formula (breast milk substitutes), foods for specified health uses (FOSHU), and foods with nutrient function claims
  • Copper gluconate: in infant formula, up to 0.60 mg/L as copper at standard preparation concentration (unless approved by the Prime Minister)
  • Copper gluconate: in foods for specified health uses and foods with nutrient function claims, up to 5 mg as copper per daily intake guideline amount
  • Copper sulfate: only for wine and infant formula (breast milk substitutes)
  • Copper sulfate: in wine, up to 10 mg per liter as copper(II) sulfate pentahydrate, and the residue must not exceed 2 mg per liter as copper
  • Copper sulfate: in infant formula, up to 0.60 mg/L as copper at standard preparation concentration (unless approved by the Prime Minister)

This is a summary of the standards for use. See the source list for the exact conditions.

In the EU

  • It is not on the EU list of food additives (Regulation (EC) No 1333/2008, Annex II), so it cannot be used as a food additive in the EU.
  • In the EU, they are not food additives; copper gluconate (cupric gluconate) and copper sulfate (cupric sulphate) are listed in Regulation (EC) No 1925/2006, Annex II (amended by Regulation 1170/2009), as forms of minerals that may be added to food.

This page lists facts stated in laws and in evaluations by public bodies; it is not a safety verdict. Additives used in Japan are approved by the government, which sets the foods and amounts they can be used in. The ADI is a guide to the amount that is considered safe to take every day over a lifetime.
