A water-soluble substance obtained by extraction from chili pepper (capsicum) fruit, with gitogenin glycosides as the main component (specifications and standards).

In Japan

  • A water-soluble substance obtained by extraction from chili pepper fruit; the specifications and standards give gitogenin glycosides as the main component. Its purpose in the list of existing food additives is manufacturing agent.
  • Another name is “カプシカム水性抽出物” (capsicum water-soluble extract) or “パプリカ水性抽出物” (paprika water-soluble extract), and simplified names are “カプシカム抽出物” (capsicum extract), “トウガラシ抽出物” (chili pepper extract), and “パプリカ抽出物” (paprika extract). There are no standards for use.
  • It is treated as a separate item from the existing additive “香辛料抽出物” (spice extract) and from the coloring “トウガラシ色素” (capsicum pigment).
