- Source and production
- Obtained from the seeds of mustard (“カラシナ”, Brassica juncea); the main component is allyl isothiocyanate. The component specifications require at least 86.5% allyl isothiocyanate.
In Japan
- Obtained from mustard seeds, with allyl isothiocyanate (the component responsible for the pungency and aroma of mustard) as the main component. Its purpose on the list is processing agent (List of Existing Food Additives, list of listed items, and Japan's Specifications and Standards for Food Additives).
- Because there is no group name for processing agents, it is labeled by substance name, as “カラシ抽出物” (mustard extract) or the category name “マスタード抽出物” (mustard extract).

In the EU
- It is not on the EU list of food additives (Regulation (EC) No 1333/2008, Annex II), so it cannot be used as a food additive in the EU.
- For its main component, allyl isothiocyanate, EFSA in 2010 evaluated a proposal to use it as a food additive and set an ADI of about 0.02 mg per kg of body weight per day, but it is not permitted as an additive.
