- Source and production
- Obtained by enzymatic breakdown of pectin with pectinase followed by ultrafiltration; a mixture of 1- to 9-mers of galacturonic acid.
In Japan
- Obtained by breaking down pectin with an enzyme (pectinase) and ultrafiltering it; a mixture of molecules in which 1 to 9 galacturonic acid units are linked. Its purpose in the List of Existing Food Additives is a manufacturing agent.
- No standards for use are set. It is labeled by the substance name “オリゴガラクチュロン酸”, and labeling is exempt when it counts as a processing aid, for example when it is removed during manufacturing.
