Metatartaric Acid メタ酒石酸
Designated additivePermitted in the EU (E353)EFSA ADI 240mg(酒石酸として) per kg body weight per day
- Purpose
- processing agent
- On the label
- “メタ酒石酸” (metatartaric acid)
- Name in the List of Designated Additives
- メタ酒石酸 (No. 409)
In Japan
- Designated in December 2020. Under the standards for use, the food it can be used in is limited to grape wine, and here wine means fruit wine and sweet fruit wine made mainly from grapes.
- It is used to prevent tartrate salts from crystallizing and settling in wine (FSCJ draft risk assessment).
Japan's standards for use
- Grape wine: up to 0.10 g per kg of wine
- When used in concentrated wine, the limit applies to the amount after dilution (administrative notice)
This is a summary of the standards for use. See the source list for the exact conditions.
In the EU
- It is on the EU list of food additives (Regulation (EC) No 1333/2008, Annex II) as E353.
- In its 2020 evaluation, EFSA (the European Food Safety Authority) set an ADI (acceptable daily intake) of 240mg(酒石酸として) per kg of body weight per day (a group ADI, for the total of related substances) (EFSA FAF).

This page lists facts stated in laws and in evaluations by public bodies; it is not a safety verdict. Additives used in Japan are approved by the government, which sets the foods and amounts they can be used in. The ADI is a guide to the amount that is considered safe to take every day over a lifetime.
