In Japan

  • The sulfate salt of calcium, used as a tofu coagulant and as a fortifier that supplements calcium. An upper limit on the amount used, as calcium, is set by the standards for use.
  • It falls within the group name ranges for tofu coagulant, yeast food, and leavening agent, and when used for those purposes it can be written together as “凝固剤” (coagulant) and so on. The simplified name when written by substance name is “硫酸Ca” (Ca sulfate).
  • It is also within the range of additives that may be used for nutrient fortification, and labeling is exempt when it is used for that purpose.

Japan's standards for use

  • Up to 1.0% of the food as calcium (excluding foods bearing special dietary use labeling).
  • Only where essential to food manufacturing or processing and for nutritional purposes.
