- Source and production
- Obtained by crushing the endosperm of the seeds of Cassia tora, a plant of the legume family. The main component is polysaccharides.
In Japan
- A polysaccharide obtained from the endosperm of Cassia tora seeds, used as a thickener/stabilizer. Another name is “カッシャガム” (cassia gum). There are no standards for use.
- When used as a thickener, stabilizer, or gelling agent, the purpose name must be shown alongside. When two or more thickener/stabilizer polysaccharides are used together, they can be written together as “増粘多糖類” (thickening polysaccharides); in that case the purpose name can be omitted because the name includes “増粘” (thickening).
