Source and production
Obtained from the exudate of the ghatti tree (“ガティノキ”). The main component is polysaccharides.

In Japan

  • A polysaccharide obtained from the sap (exudate) of the ghatti tree, used as a thickening stabilizer. There are no standards for use.
  • When used as a thickener or stabilizer, the purpose name must be shown alongside, and the simplified name is “ガティ” (ghatti). When used together with other polysaccharides classed as thickening stabilizers (two or more kinds), they can be labeled together as “増粘多糖類” (thickening polysaccharides); in that case the name contains the characters “増粘” (thickening), so the purpose name can be omitted.

In the EU

  • It is not on the EU list of food additives (Regulation (EC) No 1333/2008, Annex II), so it cannot be used as a food additive in the EU.
