Source and production
Obtained from the culture solution of Xanthomonas; the main component is polysaccharides. Its source, manufacturing method, and nature follow the component specifications in Japan's Specifications and Standards for Food Additives (“食品添加物公定書”).

In Japan

  • A polysaccharide obtained from the culture solution of a microorganism called Xanthomonas, used as a thickening stabilizer to thicken foods or hold their shape.
  • When used as a thickener, stabilizer, gelling agent, or “糊料” (paste agent), the purpose name must be shown alongside, as in “増粘剤(キサンタン)” (thickener (xanthan)). Other names are “キサンタン多糖類” (xanthan polysaccharide) and “ザンサンガム” (xanthan gum), and the simplified name is “キサンタン” (xanthan).
  • When two or more polysaccharides classed as thickening stabilizers are used, they can be labeled together as “増粘多糖類” (thickening polysaccharides).
