- Source and production
- Obtained by extraction from the leaves of stevia (Stevia rebaudiana); the main components are steviol glycosides (stevioside, rebaudioside, etc.).
In Japan
- A sweetener extracted from stevia leaves, with steviol glycosides as the main components. The component specifications require the total of stevioside, rebaudioside A, rebaudioside C, and dulcoside A to be 80.0% or more (Japan's Specifications and Standards for Food Additives).
- Japan has no standards for use, so there are no rules on permitted foods or amounts.
- Because it is a sweetener, it is written together with the purpose name, as in “甘味料(ステビア)” (sweetener (stevia)). The simplified name “ステビア” (stevia) is also used for “ステビア末” (stevia powder) and “酵素処理ステビア” (enzymatically modified stevia), so “甘味料(ステビア)” alone does not show which one was used.

In the EU
- It is on the EU list of food additives (Regulation (EC) No 1333/2008, Annex II) as E960a.
- In the EU, it is permitted as “steviol glycosides from stevia” (E960a), with permitted foods and maximum levels set.
- In 2024, EFSA evaluated an application to raise the ADI (4 mg per kg of body weight per day, as steviol equivalents) and kept it at 4 mg, finding the grounds for raising it insufficient.
- In its 2024 evaluation, EFSA (the European Food Safety Authority) set an ADI (acceptable daily intake) of 4mg per kg of body weight per day (EFSA FAF).
