Sesame ごま

The seeds of sesame (Sesamum indicum). By seed coat color they are divided into white, black, and golden (brown) sesame. They are used as roasted sesame (“いりごま”), ground sesame (“すりごま”), sesame paste (“練りごま”), and so on.

Labeling rules
- Sesame is one of the allergens recommended for labeling (those that are not mandatory but are recommended; the Consumer Affairs Agency's Q&A on the Food Labeling Standards, A-2). It is not among the allergens that must be labeled (Food Labeling Standards, Appended Table 14).
- The labeling covers the genus Sesamum, including white, black, and golden sesame. Processed products such as sesame oil, sesame paste, ground sesame, cut sesame, and sesame paste are also covered. Castor bean (唐胡麻) and perilla (荏胡麻) are not included (Q&A D-15).
- When the heaviest ingredient is a processed product such as roasted sesame, the place where it was processed is written as “国内製造” (made in Japan) or “○○製造” (made in ○○) (country-of-origin labeling of ingredients, Food Labeling Standards, Article 3). “国内製造” is not the origin of the sesame.
Good to know
- Sesame oil is covered on this site's page for edible oils and fats and vegetable oils and fats. For allergen labeling, sesame oil also falls within “sesame” (Q&A D-15).
- Among the products on this site, Ajiken's yakiniku sauce (味研の焼肉のたれ) lists “すり胡麻” (ground sesame) and “ごま油” (sesame oil) in the ingredients and lists “ごま” (sesame) in the allergen labeling. Kinigoma Honpo's roasted sesame (金ごま本舗のいりごま) is “有機白ごまいりごま(国内製造)” (organic white roasted sesame (made in Japan)), Ojika Sauce's sesame dressing (オジカソースの胡麻ドレッシング) lists “胡麻” (sesame), Nagano's yakiniku sauce (永野の焼肉のたれ) lists “有機ごま” (organic sesame), and Kanei's furikake (カネイのふりかけ) lists “ごま” (sesame).
- In the Standard Tables of Food Composition in Japan (8th revised edition, 2023 supplement), roasted sesame has 605 kcal, 54.2 g of fat, and 1,200 mg of calcium per 100 g.
